Happy New Year, Dear Reader!!! Welcome to my Top 10 Recipes of 2021 post. Year after year, I look forward to taking a look back at my most popular recipes. Some of them fall in the top ten for more than one year, and this year’s recipes are no different!

I’m here to talk you about my Top 10 Recipes of 2021, but first, I trust that you had a wonderful Christmas, Dear Reader! With everything that has been happening in the world these past two years, I know it’s difficult to get together with friends and family. If you were able to do that, you’re lucky! If you weren’t, I do hope you at least took advantage of your downtime to relax and do something you love to do. Let’s face it, 2021 was just a tad bit better than 2020, but not at all as good as we all wanted it to be!

Those who know me well will tell you that I’m always looking for the positive side of things. I tend to deal with things in a manner that permits me to be sad about something for just a short while before finding a good side to it. The same can be said when it comes to how I look at this ongoing pandemic. It’s terrible not being able to do about our normal business, but it does give us more time for being at home. And, I love being at home! Maybe I’m just old, but nothing is more comforting to me than puttering around at home.

2022 – LET’S MAKE THE BEST OF IT!

This past September, McKenna started off to university, leaving John.e and I to our own devices. I’m still not used to her being away from home. But, I have noticed that I don’t have so much laundry to do! See? There’s always a positive if you just look hard enough! Ha! Seriously though, we miss her like crazy. In fact, we talk on Facetime at least once or twice a day. Needless to say, despite the pandemic, we are blessed, and we are happy and content.

I’m blessed to have you, Dear Reader. As much as I love to cook and write, it is you who has driven my desire to make Lord Byron’s Kitchen bigger and better. I work hard to ensure my recipes are easy and perfect every time. I work hard to post a variety of recipes for all tastes and diets. And, I work hard to stay in touch with you and to answer your questions. For the whole of 2021, including all of the Christmas recipes, I published a total of 193 posts this year. So, even if you don’t love to cook and bake, I hope I’ve kept you somewhat entertained with my endless banter!

Speaking of too much banter, let’s stop it right now and get to what this post is all about – my Top 10 Recipes of 2021! Some of them were in the Top 10 in previous years too. I do hope you enjoy this little look back with me. Here’s to wishing that 2022 is a better year for you and your loved ones! TOMATO ZUCCHINI PASTA

Two of the most common home-grown summer produce are tomatoes and zucchini. Harvest to your heart’s content and prepare copious amounts of this Tomato Zucchini Pasta. It’s simple, it’s healthy, and it’s wonderfully delicious! Just one taste, and this will be a 30-minute recipe you will want to prepare repeatedly!

EASY BAKED PORK BELLY

An indulgent dish that takes hold of your senses and doesn’t apologize – Easy Baked Pork Belly is slightly spicy with hints of saltiness and sweetness; it’s super moist and super delicious!

HONEY GARLIC BAKED PORK

So delicious and tender, and a great way to use cheaper cuts of beef. Would you believe this gorgeous main is prepared with only 3 ingredients? And, one of those is the beef!

30 Minute Black Bean Corn and Rice Skillet has everything a well-rounded, wholesome meal needs! This is a perfect family dinner with many serving options. Roll it into a burrito or pile it into a bowl with cheese and sour cream on top!

Breakfast Steak and Eggs is most certainly a hearty meal! Most morning routines don’t make room for such luxuries, but a weekend breakfast or brunch is a perfect time to indulge in something as delicious as this! Go ahead and prepare the beef the night before. The longer it marinates, the more tender and juicy it will be!
